This Wild Mushroom Risotto is built on a slow-cooked base of arborio rice, gradually enriched with stock to develop a creamy, cohesive texture. Layers of sautéed mushrooms bring earthy depth and umami, while a restrained finish of butter and cheese adds structure without overwhelming the grain.
